Dinner tonite, Vegan Eggplant Parm

Dinner ... huge mixed green salad with Balsamic. (no pic).

Carrots boiled in "not beef" bullion, melted earth balance and brown sugar.

Leftover eggplant parm, (lots and lots of Daiya almost turned it into a Daiya fondue with eggplant), whole wheat fusilli pasta with some tomato sauce.

Sometimes heating leftovers with a few fresh cooked sides is just the perfect weeknight quick meal.
