Lunch

I've started back on the Dr. Fuhrman "Eat to Live" program again focusing on mainly raw and cooked greens and salads as the primary foods.  It makes sense to eat this way most of the time at

any rate but this "diet" plan is a "life" plan.  Here's a dish I cooked up for lunch in a Fuhrman "clean out the fridge while you're at it" meal.

Onions
Garlic
Mushrooms
Green Peppers
Kale
Garbanzo Beans
Tofu - wet, didn't drain it just about 1/4 of a loaf
TVP granuals
Veggie Broth
Tamarind paste
Thai Kitchen Red Curry Paste
salt
pepper
curry powder
Nutritional yeast
garlic and onion powder
red pepper flakes
Topped with raw zucchini strands.

The zucchini curls add a nice brightness to the dish.
