I came home from a trip and my 11 year old daughter surprised me with a vegan chocolate cake. Sometimes I get home from work and we're all in the same place at dinnertime. Most people take this for granted. Families of pilots don't.
After I ate a disjointed dinner of Moo Moo's Black Bean Burritos with sautéed Gardein Beefless tips and leftover dumplings from the Chinese restaurant we dug into the cake.
These are two pictures of the same cake. It was from Colleen Patrick-Goudreau's "Joy of Vegan Baking."
The cake itself had a rich chocolate flavor. For the most part the cake was moist but the bottom baked up a bit harder. I don't know enough about baking to figure out why but I do know the main ingredient, love, was abundantly delicious.
